Pumpkin Muffins


Received this from a friend during the holidays. I love to bake & share. These came out really yummy. I’m a big texture eater and these were so fluffy and light. Not grainy or lumpy. Pumpkin spice was just right. Should I make these again I’m going to add some ginger. Chocolate chips would be good too.

Are you living an Authentic life?


Do you say yes because everyone else does? Smile when there “needs to be” a smile even if you don’t feel like it? When you pretend to fit in just to be part of the group, you will eventually decide you really don’t want to anymore. When you are living out your personal values & giving your personal perspective. You will feel a greater sense of well-being. Authenticity does require an environment where people can talk freely. Have you created that space around you?

Remember, authenticity is a journey. It can be the most courageous thing you ever do.

Gut & Head


A number of studies have shown a connection between migraine headaches and certain gastrointestinal (GI) disorders, like Helicobacter pylori infection, irritable bowel syndrome (IBS), and celiac disease.

Many researchers believe that migraine headaches can be improved by diets that support healthy gut microbiota and gut-brain axis, including a low glycemic diet, higher fiber intake, supplemental vitamin D, omega-3 and probiotics.

I had really bad headaches along with stomach distress before I was diagnosed with celiac‘s. The headache would wake me up first then the stomach issues would start. I could deal with the tummy but the head was really hard to work around.

Now, as far as general life, some things that I’ve heard that have helped me along the way, I’m going to share with you here. Act today in ways that you will respect tomorrow. From how you treat yourself to how you treat others in real life and online. And what I mean by online, just remember those comments you leave online, those thumbs-up or thumbs-down, they will outlive you. They are part of your resume of who you are.

Number two: Respect yourselves and others. Inspire yourselves and others and laugh as much as possible and have as much fun as you can when you can.

Number three: Life’s hard, even without a damn pandemic. You realize that now and you’re going to enjoy your life a whole lot more later.

Number four: Don’t be afraid to fail. Learn who you are, take risks to be that person, then persist and pursue to get what you want.

Number five: Let your reach exceed your grasp. If you do that, what you end up getting is going to be better than what you could have grabbed.

Number six: You’re not going to get straight As in life. If you did, life would be pretty doggone boring because how do we ever know what was right if we didn’t screw up.

Number seven: Take care of yourselves, family and loved ones. Forgive yourselves, family and loved ones. Bet on yourself, hold yourself to task. Make a plan when you can and own it.

Kiwi..it’s a good thing?


Naturally occurring enzymes, such as papain enzymes from papaya, or aspergillus niger, have shown promise in breaking down dietary gluten in the stomach before it gets to the gut. The latest addition to that list of potentially helpful enzymes is the kiwifruit, that brown, hairy egg-shaped fruit with a sweet, tart, green flesh and edible black seeds.

I don’t eat much if any Kiwi. Think I’ll give it a try. Stay safe everyone!
